An important event is going to be held at Olio Capitale tomorrow curated by the National Association of Olive Oil Women which Elena Parovel is also part of.
Monday, March 6 from 10.30 to 12.00 in Sala Oceania at the Maritime Station it'll be spoken of "Microwave and ultrasounds in the extraction process reflexed in oil chemical and organoleptic profiles and extraction efficiency".
Microwave And Ultrasounds are New Technologies for Olive Oil Extraction that aim at making the process definitely continuous pushing back the limits of discontinuity of traditional kneading. The first plant with micro-ultrasound combination for continuous conditioning of olive paste is a project that stems from the commitment of a group of international researchers seeing involved prof. Alessandro Leone from the University of Foggia and Dr. Antonia Tamborrino from the University of Bari, with the CSIRO in Melbourne-Australia, and the Uruguay Republican University.
Results of this technological challenge that will open new innovative scenarios and introduce big changes in the transformation process will be illustrated at Olio Capitale during a meeting / debate, organized by the National Association of Olive Oil Women, in which, In addition to the prof. Alessandro Leone and Dr. Antonia Tamborrino, will participate Dr. Carmela Barracane (an expert in marketing and communication of oil plants) and dott.sa Daniela Capogna (Food technologist expert of oil machines).
