The Hummus is a Middle Eastern dish that is usually served with other appetizers. With many variations. You can find it in Egypt, Lebanon, Israel, Turkey, but also in Greece. Ours is a faster version to be prepared because it involves the use of canned chickpeas. If you want to respect tradition, I recommend starting with dried chickpeas which will be soaked the night before and cooked for a few hours. The hummus is served with a drizzle of Mackè EVO oil Macke by Parovel and simply accompanied with Pita, or simple bread Arab type, slightly heated, or with falafel (the Middle Eastern “meatballs”). But try to use Hummus for dipping colorful sticks of seasonal vegetables.
