It's one of our favourite dishes. The month of June is the best one for fishing achovies and at our place a nice cornet full of just fried hot anchovies can't be missed.
Ingredients for 4/6 people
1 kg of anchovies
3 eggs
200 g of '00' flour
200 g breadcrumbs
salt
pepper
extra virgin olive oil Mackè for frying
1 kg of inspiration to pick up some wildflowers
Clean the anchovies: open them and remove the central bone and flatten them well. Flour the anchovies, dip them in beaten eggs with a little salt and pepper and finally pass them in breadcrumbs. Fry the anchovies a few at a time in hot extra virgin olive oil Mackè. Serve without delay.
