In the autumn, when we open the Oil Mill in the Zona Artigianale Dolina, we have tasting lessons in which we explain the olive cultivation. Often in these lessons we quote the setting phase which is a very delicate step and corresponds to the initial stage of flower growth following flowering. Of all the small gems you see on this branch of bianchera, only a few will become olives and will be pressed in the autumn. However, the bianchera compared to the other varieties is one of the most productive olive trees.
